Chicken Enchilada Dip
I posted about this on Facebook the other day and was
asked for the recipe. Here it is for those of you that asked for it:
1 8 oz pkg cream cheese
1 sm can green chilies
2 lg cans chicken drained/flaked
1 pkg 4cheese Mexican blend shred
Chili powder to taste
Mix together with a mixer pour into
Dish and microwave 4 min or bake at 350
For 20 min

Cinnamon roll Casserole
I found this recipe on http://thedishydecorator.blogspot.com/2012/01/cinnamon-roll-casserole.html?m=1 and adapted it a bit to fit us.
- baking spray
- 2 cans (12.4 oz each) Pillsbury®
refrigerated cinnamon rolls with icing
- 4 eggs
- 1/2 cup heavy whipping cream
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla
- 1/4 cup maple syrup
Garnish:
- Icing from cinnamon rolls
- Maple syrup (if desired) --I found
it was sweet enough without it.
Directions:
- Heat oven to 375°F.
Spray 13x9-inch dish with pam.
- Cut each roll into 8 pieces;
place pieces in dish.
- In a medium bowl,
beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently
pour over roll pieces. Sprinkle with pecans; drizzle with 1/4 cup syrup.
- Bake 20 to 28
minutes or until golden brown. Remove covers
from icing; microwave 10 to 15 seconds or until thin
enough to drizzle over top.
- Drizzle icing over
top. If desired, spoon syrup over individual servings.

so excited.....
I just signed up for a new class over at reneepearson.com called “Cooking up a memory”. I can’t wait to find some great ways to do recipe pages/books. Very exciting….ideas swimming already….stay tuned.

Cream Cheese Cupcakes. This is good stuff!!!
1 pkg (3 oz) cream cheese, softened
1 pkg (18 1/4 oz) yellow cake mix
1/2 c butter, melted
1 1/4 cups water
3 eggs
In a large bowl, beat cream cheese until smooth. Beat in cake mix, water, butter and eggs.
Spoon batter by 1/4 cupfuls into paper-lined muffin cups. Bake at 350 for 25 min or until golden brown. Remove to a wire rack tocool completely. Frost if desired.
This recipe was emailed to me this week by taste of home.com. It was a huge hit at my house. I didnt' frost them. They are good plain.
