tonight's answer to that age old question


"so Mom, what's for supper"....Picked up Tyler after ffa practice. As I am driving across town to go to the grocery store, Tyler says "uh Mom, isn't Dad going roping tonight?" Oh CRUD! I forgot today was Tuesday. So, as we are heading to the house, I went through my list of what I had on hand here. I remembered I had a package of frozen boneless skinless chicken tenders, a jar of spaghetti sauce, fettucini noodles, and shredded mozzarella cheese. I decided that I would try my hand at making Chicken Parmesean. I fixed the chicken tenders "fried chicken style", cooked a pot of pasta, and heated up the sauce. I plated it up in layers. It got two thumbs up from the boys. They loved it.

oh did I ever get inspired....



Saturday, my friend Stacey and I went to a taste of home cooking school. We had a great time and both came away going "cant wait to try that" stay tuned.....

Recipe for breakfast casserole--thanks to Brett's Aunt Judy

Easy idea for a breakfast or brunch

 

Sausage

Bacon ( I just use a box of the ready to eat oscar meyer—30 sec in the micro per 5 slices)

1 doz eggs

1 pkg shredded velveeta

 

Brown a lb of sausage, drain

 

Start w/a greased 9x13 pan (you will thank me for this later) and put ½ pkg of hashbrowns in the bottom.  Put sausage over the top of the potatoes.  Crumble bacon over the top of the sausage.  Put ½ pkg of the cheese over this.  Put the rest of the hashbrowns on top of this.  Top with rest of the cheese.  Scramble up the eggs and pour them over the top (they will cook in the oven)  Bake at 350 for 1 hour.  YUMMMM

 

quick and easy and oh so good

Last night I tried a new recipe that we found in the north Arkansas electric rural electric magazine.  This one was called cheeseburger and fries casserole.  It doesn’t get much easier than this and my guys ate every bit of it.  I thought I would share as it could be a good recipe for any busy time as we have right now and have coming up in January-April.

 

2 lbs hamburger meat

1 can mushroom soup

1 can chedder cheese soup

1 20 oz package frozen crinkle cut fries

 

Brown hamburger meat and drain.  Add soups undiluted.  Pour into greased 9x13 pan top with fries.  Bake for 50-55 at 350.

 

See… super easy and good.

DANG Mom can cook...WHO KNEW!


Yep I went betty Crocker on them Thursday night. I started with some cream of mushroom soup in the bottom of a casserole dish. I added pork chops well seasoned with salt and pepper and cavenders of course. Then, I added some crushed croutons to the top :
While this was baking for 45 min at 350 I made some fried green beans :

I put a touch of oil in my skillet with 2 cans of drained green beans, minced onions and bacon pieces. Easy enough don't you think. I also fixed a pan of jasmine rice and some crescent rolls. It was all pretty good stuff.

Heath Bar Dessert

Oh yes, this is good stuff! Brett's Aunt Judy shared this recipe with me and it is a family favorite. It looks really pretty made in a clear glass bowl or I like to serve it in one of my favorite pottery dishes. It is easy to make and is a hit at potlucks. Brody thought I needed to post this one. Enjoy!

1 pkg Brownie Mix
1 large pkg Chocolate instant pudding
1 large container Cool Whip
4 heath bars chopped (or get it already chopped..look near the chocolate chips)

Prepare and bake 9" x 13" pan of brownie mix. Mix according to the directons on the box. Prepare package of chocolate pudding according to package, set aside. After brownies have cooled, crumble half of them into bowl. Next, put half of chocolate pudding. Then, put half of Cool Whip, and sprinkle 2 chopped heath bars. Repeat the steps above so that there are 2 layers of each. ENJOY!!!
